“You got Pizza Hut money . . .” Were the words being yelled from the front seat of my mama 1989 Ford Taurus – “But Ma I got a Book It award”. Woo, what an amazing era that I grew up in. The 80’s and 90’s were freaking AMAZING.
I’ve always been a pizza lover but it definitely wasn’t a cauliflower pizza, nope I was an extra cheese and pepperoni kind of girl. However, these days (about 4 years now) I’ve traded in my dairy and meat for plant based goodies. Who would have thought that cauliflower would be a main ingredient of a pizza – but I’m glad that it is.
Any-who, I know that I hate reading long drawn out posts about food – like, get to the recipe already. Therefore let me get to why you’re here. Thank you for being here by the way.
So, let’s get to it . . .
1 organic red pepper⠀
2 organic yellow pepper ⠀
1 organic orange pepper ⠀
1 yellow onion
Chop up veggies. Place chopped veggies in a bowl; add oil, garlic powder, paprika sweet, sea salt and muscovado light brown sugar (or seasonings of your choice) and mix well. Place veggies on a nonstick pan and roast in a preheated oven (400 degrees) for 20 minutes. Be sure to single layer as much as possible. After 20 minutes rotate pan and toast veggies – roast for another 10 – 15 minutes. Set aside until other steps are complete. ⠀
Cauliflower (1 Large head) – ⠀
Wash/rinse cauliflower. Cut into small/medium florets. Mix chickpea flour (Just About Foods brand) in a bowl. Follow the package instructions. Add prefered seasonings to the chickpea mix. I use; pepper, garlic powder, onion powder, paprika sweet, muscovado light brown sugar, chili pepper and other available seasonings that you desire. Add cauliflower florets to batter, mixing until all pieces are covered in the mix. Transfer battered florets to a nonstick pan. Be sure to spread florets as you’re layering onto the pan. Bake at 400 degrees for 20 minutes or until batter is slightly brown. Remove from oven and let florets cool for about 5 minutes. Add florets to buffalo sauce & bbq sauce.
Buffalo/BBQ sauce (two seperate saucepans) -⠀
Frank’s red hot original & Annie’s original bbq sauce
Earth Balance soy free butter ⠀
Light Muscovado Sugar
Mix together in a saucepan and simmer on medium heat, stirring until desired consistency. Remove from heat. Add the florets to the sauce until coated. Return the sauced florets to nonstick pan and bake (450 degrees) for an additional 15-18 minutes. Separate the two sauces. Buffalo on one half of pan and bbq on the half on pan. Remove from oven, set aside and let cool. Continue on to next step (prep the pizza dough). Note: Be sure to set some of each sauce mix to the side to add to pizza dough.
Pizza Crust -⠀
Simple Mills almond flour pizza dough. Follow the package instructions. Once dough is mixed according to package instructions, add a little flour to help with stickiness (I found this dough to be a little sticky; which prevented me from rolling out the dough, as it would continue to stick to the rolling pin and my hands. I like thin crust pizza, so I’m able to get two pizzas out of this dough. Transfer dough to nonstick pizza pan and/or cast iron skillet.
Pizza Toppings –
Step 1: Add previously prepped buffalo and bbq sauce to each pizza and spread over pizza dough.
Step 2: Add some of the sauced florets to top of pizza
Step 3: Add some of the roasted veggies to top of pizza
Step 4: Add organic baby spinach to top of pizza
Step 5: Add fresh sliced jalapeños to pizza
Step 6: Repeat steps 2-4
Step 7: Add dairy free “cheese” to pizza: 1 bag of Follow Your Heart or Violife Mozzarella. Personally, I prefer Follow Your Heart when making pizza; however, both of these brands are really good dairy-free “cheeses”.
Place pizza(s) in the oven and bake (450 degrees) for about 6 – 7 minutes. Rotate pizza and bake for an additional 4 – 5 minutes. Remove pizza(s) from oven, top with buffalo/bbq sauce. Cut into desired slice sizes. Note: Pizza can be stored and warmed up in oven. I personally don’t use a microwave, Besides food (especially pizza) taste much better heated in the oven.
