Well hello there lovelies; it’s been a while. I haven’t given you good quality blogging in about 4 months. Lol Shame on me! Happy New Year, Happy Valentine’s Day, Happy Easter . . . All those wonderful things; if you celebrate them.
Any-who, let’s jump right into it. So, as you can see from my title; this post is all about good food. Good vegan food! As a matter of fact, I’m going to start sharing my recipes and dinner ideas with my lovelies more often. Well goodness, aren’t I kind?! Seriously, so today I made this fantastic, kick-ass Penne Pasta . . . Cajun Jerk Vegan Veggie Penne Pasta to be precise. Lol It’s kicking with lots of favor and your girl loves herself some flavor and spice.
Well, enough of the small talk, here’s the recipe:
Creamy Jerk Penne Pasta
Ingredients:
Almond Milk (Brand – New Barn Carrageenan Free) – 28 FL OZ
Penne Rigate w/Chickpeas (Vegan) Brand: Delverde – 1 LB Bag
Organic Yellow Pepper – 1
Organic Red Pepper – 1
Dry Jerk Seasoning (Brand – Juliana) I don’t have seasoning measurements, I just sprinkle until my ancestors say . . . “That’s enough my child” I seriously “borrowed” that from somewhere via social media. I swear it’s the truth though! LOL
Cajun Seasoning (Sprouts)
Smoked Seasoning (Kroger)
Fresh Thyme Sprigs (I love fresh thyme, so I use a lot of sprigs)
Minced Garlic or Fresh Garlic Cloves (Sprouts)
Onion – 1 Large or Onion Powder
Vegan Butter (Brand – Earth Balance Soy Free)
Step 1: Boil your pasta per the bag instructions or to your liking (I put vegan butter, a little sea salt, and olive oil in the pot) Set aside after boiling, don’t rinse with cold/cool water . . . It does nothing but takes aways the flavor)
Step 2: Mix the almond milk, all of your seasonings (add extra if you’d like . . . ones that I didn’t name) and a few thyme sprigs. Simmer on medium/low for about 5 minutes and then set aside.
Step 3: Chop (mince) garlic, onions and peppers. Place in a skillet (I use a cast-iron skillet/pan) with a little vegan butter and simmer. Add more thyme sprigs and jerk/cajun season.
Step 4: Add the milk mixture to the skillet/pan that’s contains the onions, peppers and garlic. Let simmer on medium/high until it thickens.
Step 5 (Final step): Add pasta and mix well (I use a wooden spoon) I add more seasonings to taste and top with more fresh thyme sprigs.
